You don't even need to cut power to the coils, that's way harder. Most alarms just break the circuit that goes from your ignition on the steering column to your starter. This wire is easily accessable from under the dash/steering column.
All you would have to do, is find the wire, cut it, and splice a on/off switch between the two sides. Turn the switch off and the starter is disabled...turn the switch on and the car will start like normal. Then you can hide the switch somewhere not too obvious.
If you take it a step further, you could put a push_button on the ignition wire and ground/switched power wires, and make your car a push-button starter!!! Put your key in and turn to the on position...then reach over and push your "Start" button that will actually enguage the starter.
You could make the button an obvious color like red and put it out in the open to make it look "cool", or you could hide the button and make it an antitheft device.
