I know the ecu of the 2002 wrx doesn't support dual avcs but would it be able to be run through an aftermarket engine management system or access port? Also if not, would it be necessary to swap the cam and cam gear with non avcs versions or would I be able to just remove and plug the avcs sensor in the heads?

There are aftermarket systems that will support it, the Subaru system from that year will not.

Accessport is only for reprogramming the existing ECU.

You would likely need a full standalone, although some folks back in the day were able to repurpose the TGV control signals for single-AVCS. I don't recall how this was done.
