I'm brand new to the car community and bought my first 2016 WRX. I have a catted 3" Mishimoto downpipe to a stock catback system with a pro-tune.

I want to upgrade to a new catback system but don't know what to look at or what to look for.

I know what I want though, which is, a nice rumble when at idle, but not loud enough to wake neighbors (I get up around 3-4 am). I want an aggressive noise when I get on the gas, but I dont want it to be stupid obnoxious. Also, don't want highway drone. Idk what causes that, but it doesn't sound like it's fun to hear while you're diving your car.

Any suggestions, or ideas?

Have you considered motorized cutouts? If done after the rear catalyst, separate tuning profiles are not necessary.

This is really the best option for "loud when you want it"

Then you are indeed new to cars.

Cutouts have been around for decades.
