What do you guys recommend on suspension components? I wanna get coilovers but I thought I'd get some opinions first. Also apart from coilovers what would be good mods? Are strut bars helpful?
Btw I'm aiming for a street car I can take to the road coarse track

I wouldn't recommend coilovers for handling (unless you're planning on spending more than $2000 to get some decent ones). Strut bars don't do much on these cars. Sway bars can be a good improvement though.
What car (year and model) are we talking about here?
08 WRX
First and foremost: alignment and driver mods.
Secondly, sway bars and endlinks.
After that consider bushings all around, and THEN your struts and springs. Although the 08's do have a very soft suspension from the get go, so it's up to you on where to put that on the list.

But I know I'm gonna need coilovers so I can adjust spring rate, ride height, and damper...any suggestions?
How do you "know" that?
If you're going to be getting coilovers, start saving up now. If you want any kind of roadable coilover setup, or reliable track setup, you should plan on spending 2-4 grand. On the other hand, if you go the strut + spring set up, you can plan on ~1500 and have one hell of a nice setup.

Are you really going to be adjusting them all of the time? I'd be willing to bet that RCE Yellow springs on D-Specs will handle better than 90% of the coilovers out there. I'm not sure how you plan on adjusting spring rate without taking them apart and swapping springs, and in that sense any strut is also adjustable spring rate. A good spring/strut combo is going to give you the proper amount of drop (not ridiculous) and the dampers ARE adjustable. No reason to get coilovers IMO.
If you're really set on coilovers and you want top of the line ones then my suggestion is Cusco Comp-X (not many people want to pay $11k+ for coilovers though).
why yellows? Blacks, or Spec R's. Yellows are too much of a drop for a street car IMO.
Yellows are what Clint @ TiC recommended for me.. honestly, I had never looked at the drop (I assumed the only difference between the blacks and yellows were spring rate). I see now the Yellows are a 15mm drop (compared to 5mm for blacks).. that is a little much unless you plan on reworking other suspension components. Although 15mm isn't THAT drastic.
Well some coilovers are able to adjust spring rate by adjusting preload on the spring
