Go to user PC, then profile I believe. You will find an option that says something like emails from the forum, and turn it off. Not too hard

F-ing LOL!!!!
GeneralGeeWhiz has it right though. In your "User CP" you click on "options" and then you can set what the default notification for threads you post in is. You also have the option to subscribe to threads that you haven't posted in by going to "thread tools" when you are viewing a particular thread. Hope that helps.
