It's pretty straight forward if you've got Photoshop. I had to buy the Photoshop CS Bible for a digital imaging class I took a while back.. I tried to use the book once to figure out how to do something and it was no help at all because it simply has too much information to sift through.
I have certain tricks I use to chop stuff that they never taught us in class.. I think most people teach themselves so there's lots of way to go about doing the same thing.
Very true, I have been using photoshop randomly for about 10 years and I still learn new stuff all the time. There is no right way to do anything which is why photoshop is so great.
a couple other sites you might want to check out:

http://photoshopcontest.com - neat to look at some entries and figure out how they did stuff. also good to enter to help better your skills (i haven't done this yet... don't have time)
here is a link to a photoshop class i took. the instructor was one of the original 10 creators of PS 1. This is some of the coolest stuff i learned and ive been useing photoshop for about 10 yrs. work with photoshop every day as a designer . check it out and try some of the things very cool stuff if you want to learn how to make the most out of your digital images.
