Just intallled my EGT gauge without the probe yet. Light works and dims.
Tapped the ignition positive from a blue/black wire off the cruise switch.
Should the reading be at zero without the probe ?

With no input from the probe, there will be no reading on the gauge. An egt gauge using a k-type thermocouple needs a voltage input to give a reading, for example 300C yielding 12.2mV output from the thermocouple. With no probe plugged in to complete the circuit and provide an input voltage, you will have no reading. I don't know what type of EGT gauge you're talking about. Autometer, Greddy, Defi etc all use K-type probes as far as I have seen.
And why would it matter if your gauge is showing max temp if it isnt receiving any input? If it was pegged with the probe in... you know the rest.
