Check your tire pressure. Driving 55 mph will get better mpg's than driving 70-75 mpg's. Has to do with the drag coefficient/aerodynamics of the car.

Correct me if I'm wrong, but won't tires also have an effect on fuel economy? Wider, stickier tires increase rolling friction thereby decreasing fuel economy...

This. The force of drag is proportional to the velocity of the object squared. That is, the faster you go, the car experiences an increased nonlinear backwards force.

Absolutely, this week I swapped my winter tires for my summers and it increased fuel economy by at least 2-3MPG. And to the OP, it sounds like your gearing has been changed, 3k RPM in my car is 75MPH, 3500 is near 90MPH

I figured it would be the other way around summer tires have increased contact patch and stickier rubber, hence more rolling friction

They are wider (235 vs. 215) but the tread is much more aggressive to dig through the snow, so there is much more rolling resistance on a winter tire
