    Mobile is in Alabama.

Your consumption is 1 qt every 2,000 miles. What is the permissible normal consumption stated in your owner's manual? For my car the manual states twice that. Yours may vary.

You can experiment with other viscosities and brands provided the oils you try meet the viscosity and spec ranges listed in the manual. Be aware though that consumption can be erratic with a new oil so if you change, check more frequently. Eventually you'll see how the next oil behaves and won't have to check as much.

What year is your car? The post above yours shows good data for Delo, and it is less expensive than Mobil 1. However I don't think it meets the warranty spec so for a newer car I'd find something that does, to the letter, and keep dated receipts.

Mobile 1 has never really been well-received as a quality oil to be used in Subarus. I've seen a lot of stories where it likes to burn off much quicker than other oils.

I've used the 10W-30, 10W-40, 0W-40, and 5W-40 Mobil1 in my Subaru. I liked the 5W-40 best, this is their diesel truck oil. The motor used oil with all if them but nothing terrible. Now I just shop by price. Currently has Mobil1 10W-40, for example. Just top it up.

    ??What oil should I use??

I've got 6,xxxx miles on my '13 WRX. I changed the FF @ 1,000 miles and changed the oil again @ 5,000 miles, both times I used SN M1 0W-40. The first filter replacement was a Subaru blue and the second was the black filter from fredbeansparts.
I've had zero noticeable consumption and I had my intercooler off about a month ago and didn't see any oil present in the tubbing.

I have no interest in trying any other oil at this point in time.

I've been using rotella I guess the T6 or t5... whatever most people use, but I've read some things about it that make me wonder how good it is. I've used German Castrol 0w-30... after 3500 miles I didn't like how black it was and how burnt it smelled vs. the Rotella though. I've heard the Valvoline (which one I don't recall) synthetic whatever now meets euro spec, mobil one supposedly causes spun bearings, so stay away from that royal purple had an issue a while back where it got in trouble for making claims that were untrue, so for me, they are not a trustworthy company.

The real answer is... no one knows with these motors what is best. Blackstone labs tests oil, but there are certain things it misses and there are companies who can get MUCH more in depth of your oil to give you a much better picture of what is going on with it.

Do those actually meet the specifications? I don't see an API donut on any of the containers and the marketing speak states the oil "... exceeds API, ACEA and JASO performance requirements..." without specifying which requirements, anywhere that I can see.

To me this implies these are not API oils. Am I mistaken? If they are not API oils they do not meet warranty spec.

A picture of the back of any of the containers would be very telling.

That is for non performance oils. They only meet API, and do not contain zddp. This is high end stuff, tested and engineered to be used under high demand engines, race or street.

OK however this means the oils are not suitable for use in Subarus under warranty. If you're out of warranty it's not an issue.

EDIT: So they are API oils with donuts on the bottle?
