I live in Nova Scotia just to indicate elevation and temp. I have been using the AP V2 to watch my milage (Stage 1 with a 3" CATback). I drive about 190km (120 miles) to work and back everyday. It is around 90% highway. I have calculated this over 1000's of Kms. This is what I have found:
Driving Fun:
Shifting around 3500-5000 rpm in town
Highway speeds around 120 - 125 km/h (75-77mph)
Passing with downshift and wot
winter tires (...it is still winter)
equals
20 to 23 mpg
Driving not so Fun:
Shifting around 2000-2500 rpm in every gear
Highway speeds around 100-105 km/h (62-65mph)
Passing... well no real need... I do get passed a lot (speed limit is 110 km/h (68 mph)

equals
26 to 28 mpg
On a side note it typically takes the same amount of time to get to work no matter how I drive... I guess speeding only gets you behind that slow car faster....

Hmm... ill try cleaning my maf sensor and changing my fuel filter and see how that helps...

Jiffy Lube will not be able to change your filter for $50. They could if you had a 02-04 because in these years the filter was in the engine bay, and easy to get to.
The 05+ Impreza's have the fuel filter in the gas tank. Most shops will charge an hours worth of labor + parts to do it.
Here's the instructions on how to install the fuel pump, but it's nearly the same steps to change the fuel filter.
FUEL PUMP INSTALL
And anyway, there is no need to change the fuel filter, as your mileage will not be changed by having a new filter.
You need to train your right foot.
