I think you already answered your own question when you said you "get nervous and roll". When I started out I noticed that most of my mistakes came when I was focusing too hard on what I was doing. Just try to relax and have some confidence when you're practicing

Experience, drive, drive and drive. Eventually you'll need neither to e-brake, or hill assist which is a nuisance. The WRX has a short clutch throw, at least mine does, as opposed to others I've driven. So you'll have quick engagement which can be of great benefit on hills.

Don't think of it as being on a hill. Just immediately get on the gas and off the clutch. It does help to not get psyched out. Eventually you will get it down.

If u want to find the catch point of the clutch, go into an empty lot and put the car in first gear. Without even touching the gas, slowly let go out your clutch to the point where the car is NEEDING the gas. The car actually still moves but don't let go of the clutch completely. Your should be able to replicate that spot on a hill bout this time gas pedal

Wow! I came back to a lot of kind, encouraging comments.
Thank you all for your words of advice, I will try to get on some hills and practice getting faster and staying calm.
