There are a number of different options. It all depends on the type you want.

As for portable, you could just buy a portable DVD player and they sell cases for them that strap to the back of the head rest and hang.

You could get a flip down unit that is attached to the headliner, this is most similar to what you see in SUVs and minivans. Some are just a screen and require a DVD source, but I believe some of those have DVD players built in, so the DVD feed is independent from the factory radio (less modification).

Because the WRX/STI has the faux racing seats, it wouldn't be possible to add an aftermarket headrest with a screen built it. It would probably be possible to custom install a monitor in the back of the factory seat, but that is probably cost prohibitive.

Those are the options I can think of off the top of my head. It has been a long time since I worked with mobile AV systems like that, so there may be more recent innovations that I'm not aware of. I think your best bet if the portable player. You'll get the most use out of it, it requires no permanent modification, is likely the cheapest, and can be removed from the car when not in use (not a theft target).

Do you have an ipad? You can get headrest mounts for ipads quite cheaply.

    There you go. Nicely done.

You could probably pair that via bluetooth to your stereo, if you can stand listening to kid movies/cartoons every trip, haha.
