There are tons of Photoshop tutorials out there, just Google. If you don't have Photoshop, there's an open source (free) tool called GIMP. Search for it on Google, it's somewhat similar to Photoshop although obviously not as robust but great for an open source project.
Also, changing the color of your car is easy - especially since it's already gray. I don't have Photoshop @ work so I can't help you out... But if you find shots of all the stuff you want at a reasonable angle it will make it much easier for someone that does. If someone got that hoodscoop on that WRX photo without it looking 100% retarded it would be an absolute miracle.
